A much-loved ancestral method sparkler, lean and zippy this vintage with plenty of yellow citrus zest, pear and dry herbs cut through with a long, electric line of acidity that sets the mouth watering. The bubbles are impressively fine-beaded for a wine made in this style. The overall character is unmistakably Loire and makes for a note-perfect aperitif, especially at this low gravity.
The blend is equal portions of Menu Pineau, Chardonnay and Chenin Blanc, the younger vine Menu Pineau bringing great freshness and acidity as a counterpoint to the other 60-year old vines, all planted over gravelly limestone. Everything here is done by hand; the wine is transferred from tank to bottle during the primary fermentation and then racked in contact with the lees. From an early harvest in late August, it was ready to be disgorged by December 2025.
