Ancestral-method Chenin made using the earliest harvest selection for its abundance of mouthwatering acidity.  The two years sur lattes before disgorgement has taken the wine from quenching pet-nat into altogether more refined territory.

Open aromas of ripe orchard fruits take on a zing of sherbet as perlant pinprick bubbles dance on the tongue. A hairline wire of lingering acid pulls through ripe flesh and chalky minerals, into an extended saline finish, the brioche and spice of the lees an assured counterpoint to the clean, linear fruit.

From the first passes of the vineyards in early to mid September, the grapes were pressed directly and then bottled with no additions right at the start of 2024, while fermentation was still in motion. Feeling the benefit of a warm, balanced 2023 vintage this everything you’d hope for in a sparkling wine made from this noble grape.
