A new pet nat of supreme refreshment, made with 70% Gros Vert, an obscure grape not often cultivated for winemaking that Val purchases from a neighbouring organic grower in Luberon. It can be harvested very late in the season whilst retaining high acidity and, as its name suggests, an underripe, green character. The splash of pink comes from the remaining 30% Grenache, bringing red berry fruits and a little spice.
